COOKIE OF THE WEEK: Peanut Butter Blossoms

This post is a tribute to my Aunt Theresa who turns 80 this month and who is a pro at making these cookies.

I would probably use all butter but the recipe calls for some shortening.  In my experimenting, I have found that all-natural peanut butters make a more flavorful, moister cookie.

The chocolate “kisses” go on the cookie before you put them in the oven. Enjoy and make someone smile this week by putting some of these in their lunchbox!

PEANUT BUTTER BLOSSOMS

1/4 cup butter
1/4 cup shortening
3/4 cup peanut butter
1/4 cup granulated sugar
1 cup brown sugar
1 egg
3 tablespoons milk
1 tablespoons vanilla
1 3/4 cup flour
3/4 teaspoon baking soda
3/4 teaspoon salt
Chocolate kisses candy

Combine sugars, butter, shortening, milk and vanilla. Add egg.

Fold dry ingredients to butter mix and blend well.

Roll dough into teaspoon-sized balls and roll in sugar. Place kiss in center and press down to set. Bake at 350°F, 7-10 minutes.
